2021 Manon APQ

A super thirst-quenching and delightfully fruity blend of apple, pear and quince from Manon Farm. Everything is pulped, macerated for a day, then pressed through cut summer meadow hay. Partly fermented in clay amphora, as well as old French oak barrels – bottled as a Pet Nat with a further year and a half of slow fermentation in bottle.

Marine biologist turned vigneron Kyatt Dixon says it’s very possible that calling this blush, crystal clear sparkling Pinot Noir a pet nat doesn’t quite do it justice. He and his partner Anna are delivering some of the most terroir-driven wines in Australia – this one is an elegantly mineral fizzy wine that comes from their most richly volcanic site, Eumeralla vineyard (or ‘Quilly's’). Essential summer drinking.
